Big changes are coming to the Thompson Hotel, as high-end Italian restaurant Scarpetta is set to be replaced by a new duel-restaurant concept from The Chase and The Chase Fish & Oyster team. According to Toronto Life, the new dining destination will consist of Colette, "an upscale, 100-seat dining room specializing in traditional French cuisine," and Colette Grand Cafe & Bakery, which will serve sandwiches, pastries and other to-go items, with The Chase chef Michael Reh creating the menus. Scarpetta, which will have its last service on March 15, opened in the summer of 2010 to immediate scrutiny, not helped by celebrity chef owner Scott Conant's "open letter" to the city of Toronto ( or "T-Dot" as he calls it) posted on Huffington Post prior to the opening. The new restaurants are expected to open on May 1, so do check back for future details and updates.
