Here's an interview with Ashley Wittig of Bunner's, Toronto's first vegan, gluten free bakery. She's been working on some of these recipes for years, in order to focus on taste and not just make "a token 'allergy free' offering." The sweets include mini cinnamon buns, cookies, brownies, and a "fauxstess" Hostess-like cupcake. The bakery has been such a success that a second location and a cookbook are in the works. ?
